To make herbal salt blends, simply grind together your choice of herbs like oregano, thyme, rosemary, or sage and mix them into a batch of coarse salt. For a finer blend, pulse the mixture quickly in a food processor, blender, or a mortar and pestle. Transfer everything onto a tray and let it air dry for a few hours. Simply place your choice of herbs or flowers in a jar,  cover completely with oil, cover tightly to prevent moisture from getting in, and let it rest for a week in a sunny spot. After a week or so, you can drain the mixture using a fine-mesh strainer and transfer it to nice jars.
